Gingerbread Pancakes
The Jensen family has a deep appreciation for pancakes. I first made these the day our son started kindergarten. He said they were the, “best pancakes ever!” Now, take this with a grain of salt, as he was only five years old at the time. 😉
These would be great served Christmas morning!
1 cup flour
1/3 cup brown sugar
1-1/2 tsp baking powder
1/4 tsp baking soda
1 tsp ginger
1/2 tsp cinnamon
Pinch cloves
Pinch nutmeg
1/4 tsp salt
3/4 cup sour cream or plain Greek yogurt
1/2 cup milk (may need more)
4 TBSP unsalted butter, melted
2 TBSP molasses
1 egg
Combine dry in one bowl and wet in another. Stir together, but don’t over mix. Pour on well greased griddle (350 degrees), as these tend to stick. Flip when bubbles appear on the surface. Cook on the other side until golden. Serve with LOTS of maple syrup. (Bill believes in having a bit of pancake with his syrup.)

For Art's Sake
If you grow up in New Orleans you learn to appreciate art (and food and music and parades, etc.), so it's appropriate to share a bit of art with our readers.
I often say, "there is beauty in simplicity" when discussing a Client's finances. This is also true in art. I was struck by the simple beauty of this Christmas tree which was constructed of lobster buoys. Each of the buoys were painted by local school children in Maine.
